Chicken Liver Pâté

Ingredients

  • 500g chicken livers
  • 1 medium onion, thinly sliced
  • 3 small garlic cloves, minced
  • 2 bay leaves
  • a bunch of thyme leaves
  • 3/4 cup water, hot
  • 50g butter, for processing
  • 25g butter for topping
  • freshly ground black pepper
  • salt

Directions

  1. Sauté onions, garlic, and thyme
  2. Add chicken livers, salt, bay leaf, and water
  3. Keep on low heat, with lid, stirring occasionally
  4. Once cooked, cover and sit for 10 minutes
  5. Using a slotted spoon, transfer ingredients to food processor
  6. Process coarsely and add salt and pepper
  7. Begin adding butter and processing until incorporated and smooth
  8. Scrape the pâté into ramekins
  9. Melt the butter for topping and pour over the top
  10. Cover with plastic and refrigerate
