Ingredients
- 500g chicken livers
- 1 medium onion, thinly sliced
- 3 small garlic cloves, minced
- 2 bay leaves
- a bunch of thyme leaves
- 3/4 cup water, hot
- 50g butter, for processing
- 25g butter for topping
- freshly ground black pepper
- salt
Directions
- Sauté onions, garlic, and thyme
- Add chicken livers, salt, bay leaf, and water
- Keep on low heat, with lid, stirring occasionally
- Once cooked, cover and sit for 10 minutes
- Using a slotted spoon, transfer ingredients to food processor
- Process coarsely and add salt and pepper
- Begin adding butter and processing until incorporated and smooth
- Scrape the pâté into ramekins
- Melt the butter for topping and pour over the top
- Cover with plastic and refrigerate
